here in Tobago you have to eat fish. I’m biased I’m going to say have a flying fish sandwich here,” recommends Kenny (Duane Kenny, manager) when I ask him about lunch...."

"...The standout for me is the pepper sauce made by Chef Matthew Alfonso, a relocated Trinidadian. The pepper sauce appears unassuming when first brought to the table (as nearly every restaurant on the island makes their own version), but the taste
is marvelous. His recipe is an heirloom from his mother, made by cooking habaneros, garlic, lime juice, ginger, onion, vinegar and local herbs, before pureeing–an unusual method by Tobago standards...." -KAILASH MAHARAJ

"....At Café Havana a restaurant in a Scarborough suburb, owner, Gloria Jones-Knapp blends traditional Tobagonian cuisine with Latin influences. Decorated with ceiling fans, antique Asian furniture and
movie billboards, the two level restaurant also features an outside dining area. The adjacent Bacolet Beach Club, Half Moon Blue Hotel and beach bar RoK are also owned by Jones-Knapp who began
