a relocated Trinidadian. The pepper
sauce appears unassuming when first brought
to the table (as nearly every restaurant on the
island makes their own version), but the taste
is marvelous. His recipe is an heirloom
from his mother, made by cooking habaneros,
garlic, lime juice, ginger, onion,
vinegar and local herbs, before pureeing–an
