How does a great restaurant begin? Does it begin when the first customers walks through the door? Does it begin when the plans are made and the concrete is mixed? For Ritchie Breen and Jay Daniels co-owners of Saint Germain, which opened in Calgary in February 2006, it began much earlier. “When everyone else was going to shop class, I took home economics,” says Breen.
