"The acidity in the raspberry mixed with a little bit of sugar, you’re getting a lot of tropical fruit from this cocktail, the acidity in the raspberry really brightens it up.  You’d have it on your last sip- like a cleanser." - Daryl Drainville

Glass: flute
Method: build

4 oz. Pongracz Sparkling Brut
1 oz. Tinhorn Creek Kerner late harvest
2 raspberries to garnish

This is one of the ultimate expressions in the cocktail world, the late harvest wine adds sweetness, earthiness and exotic fruit flavours (mango, lychee, papaya) to the sparkling wine, taking on a slightly sweet characteristic, but with much deeper flavours.
